Recipe of the Week | Easy Grilled Lemon Chicken


Equal parts: Lemon Juice, Soy Sauce (low sodium is good) and Light Extra Virgin Olive Oil

Sliced in small pieces–Green Onions

Salt and Pepper to taste

Skinless/boneless thin cut chicken breasts


Prepare Marinade.

Place in container with chicken and refrigerate at least one hour

Cook chicken on grill, basting with marinade and seasoning until done.  Discard unused marinade. 

You can eat with a side dish or put in a salad and everyone will marvel at what a wonderful cook you are for preparing this healthy meal.  And it’s perfect for warm summer evenings.
